Peanut Butter Ice Cream with Caramelized Bananas and Chocolate

Pb icecream with Caramelized Bananas and ChocolateI can’t believe I haven’t posted in 2 months. I can’t give excuses…I was lazy. But now I’m back! My dad’s birthday is coming up so I thought I would  highlight his favorite things: peanut butter and ice-cream! Now, who could resist the American classic: pb, chocolate, and bananas. I know I can’t! Even though it is officially autumn, here in LA, it most definitely isn’t, therefore, ice cream is still perfectly acceptable!ready to eat You may be thinking Peanut butter ice-cream, really? Well, it has a rich, full-fat flavor perfect for creamy ice cream. Combine that with sweet, caramelized bananas full of vanilla and cinnamon essence and some bitter chocolate chips; you’ve got a match made in heaven!chocolate bitsP1030113 I personally have been having a hard time finding not-so-sweet ice cream at the supermarket that still has character to it, so I decided the only way to get some was to make it. And it couldn’t be easier. All you need is a little time.

*note: I mention to add vodka to mixture because alcohol freezes at a much lower temp. than water so it keeps the ice cream from becoming hard, but it is not a necessary step.

Recipe (yields about 1 qt) *allow 3 hours for cooling ice cream base Ice cream base: (adapted from seriouseats.com)

1 c. unsalted peanut butter (preferably no-stir)

3/4 c. granulated sugar

1/2 tsp. salt

1/2 tsp. vanilla extract

2 tbs. vodka (optional)


2 bananas, sliced

2 tbsp. unsalted butter

2 tbsp. brown sugar

dash of vanilla extract and cinnamon

1 c. dark chocolate chips (60% or more preferably)

How to:

1. Blend first 5 ingredients until smooth and refrigerate for 3 hours or until very chilled

2. Churn ice cream base according to manufacturer’s instructions

3. Melt butter in pan and add sliced bananas, brown sugar, vanilla and cinnamon

4. Cook banana mixture until caramelized and fragrant, about 5 minutes. Set in refrigerator until completely cooled

5. Mix chocolate chips into ice cream and layer with banana mixture

6. Freeze ice cream and bon appetit!
