Lentil Bruschetta Dip

Lentil Bruschetta DipI’ll start by saying this is probably one of the easiest and tastiest dips I’ve ever had. To be honest, I eat it as a side dish all the time too. It has a sweet tomato flavor from the bruschetta with a satisfying crunch from the chunks of tomato. And the feta adds little bites of creamy saltiness while the basil adds freshness to the dish. And lentils: Hello, protien!(magic to a vegetarian’s ears) Another great thing, you can get all the ingredients at your local Trader Joe’s. (Don’t worry, it’s not necessary to get the ingredients there though) I learned this recipe from a friend and adapted it to my own liking. It is a smash at any party or gathering. Now back to TJ’s. You can buy their pre-cooked lentils in a package and the bruschetta comes pre-made in a jar. Sounds a bit non-homemade, but their good quality purchases with ingredients whose names you can pronounce(nothing you wouldn’t find in your pantry).Ingredients for BruscettaThis dip works great with any cracker(I love pita crackers), but also compliments well as a flavor-packed side dish. Its pretty simple assembly makes it an easy appetizer for parties so you don’t have to worry about making extra mess in the kitchen! I highly recommend this dish to everyone because it is simply addicting! I hope you like it as much as I do! P.S. I believe it is pronounced Bru-scet-a in Italy, but correct me if I’m wrong. 2 1/2 c. lentils, chilled and cooked (whole package from Trader Joe’s)

2 c. bruschetta(1 1/2 jars Trader Joe’s Brand)

1/2 crumbled feta cheese

about 4 leaves chopped basil(plus more for garnish


1. Mix all ingredients together and garnish. Enjoy!Bruscetta from side
